Fried rice is a typical oriental preparation that is very simple to make. It is a recipe that has as a basic ingredient the rice that can be enriched with numerous ingredients according to their tastes. The main phase is to brown the cooked rice in sesame oil, or seeds, boiling. You can cook the rice by steaming or boiling in water, the important thing is that when you add it to the pan, it is very cold, possibly spent a few hours in the refrigerator. This will ensure that, thanks to the temperature change, the rice remains well-grained, rather crunchy and therefore particularly tasty. You must prefer a long bean rice like basmati type, but you can simply use white rice from other preparations. You can also customize the recipe using other types of vegetables such as peas, mushrooms and broccoli florets and enrich it with meat, minced or cut into small pieces, of chicken, veal or beef, or with diced ham or with shrimps.

Cook the rice by steaming or boiling in unsalted water. Drain it very well, let it cool and put it in the fridge for at least an hour.

Wash the carrot and zucchini, peel the first and cut them both into sticks. Peel the green onions and cut them into rounds. In a non-stick pan or wok, heat the sesame seed oil very well, add the vegetables and stir-fry them for a few minutes.

Add the rice and fry for 3/4 minutes, stirring occasionally.

Meanwhile, beat the eggs, add them to the rice and stir quickly.
