Smažený gnocco patří k tradiční Emilian kuchyně. Původní recept na smažené gnocco vyžaduje smažení na sádle, ale dnes dáváme přednost použití oleje jako alternativu. Smažený gnocco je velmi snadno recept na přípravu, stačí mít trochu trpělivosti hníst ingredience dohromady: mouka, voda, mléko, vepřové sádlo a kvasnice. To může být rád horké, jednou smažené a lehce zahřeje, doprovázené uzeniny. S postupem času smažený knedlík přijal různými jmény, jeho dobro zůstal neporušený!
